• When food begins to boil, reduce the power
• Use lids to save energy and time
• Minimize liquid/fat for shorter cooking times
• Start high, then reduce heat when food is hot
Temperature Settings Guide:
1-2: Gentle reheating, melting, slow heating
3-4: Reheating, simmering, rice cooking
5-6: Pancakes
7-8: Sautéing, pasta
9: Browning, blanching, boiling
Simmering and Rice Cooking:
• Simmering is cooking below boiling point, around 85°C, with occasional bubbles rising to the surface of the cooking liquid. This type of cooking is essential for cooking tasty soups and tender stews, as the flavours develop without overcooking the food. Cooking below boiling is also suitable for egg-based and flour-thickened gravies.
• Some types of cooking, such as absorbent rice, may require a higher than minimum temperature setting to ensure adequate cooking within the recommended times.
Searing Steaks:
To cook juicy, flavourful steaks:
1. Leave the meat at room temperature for about 20 minutes before cooking.
2. Heat a heavy-bottomed frying pan.
3. Brush both sides of the steak with oil. Drizzle a small amount of oil into the hot pan and place the meat in.
4. Turn the steak only once during cooking. The exact cooking time depends on the thickness of the steak and the degree of doneness you want. The cooking times vary from 2 to 8 minutes per side. Press the steak to judge the degree of cooking; the tougher it is, the more well-done it is.
5. Let the steak rest on a hot griddle for a few minutes to soften it before serving.
Browning:
1. Use a flat-bottomed wok or a large frying pan compatible with glass ceramic.
2. Have all the ingredients and equipment ready. Browning must be done quickly. If you need to cook large quantities of food, cook a little at a time.
3. Preheat the pan briefly and add two tablespoons of oil.
4. Cook the meat first, then set it aside to keep warm.
5. Brown the vegetables. When they are hot but still crispy, lower the temperature of the cooking zone, place the meat back into the pan and add the sauce.
6. Gently stir the ingredients so they are piping hot.
7. Serve immediately.
